Ingredients:

- 450g diced lamb

- 1 onion, roughly chopped

- 120g rogan josh paste

- 230g can chopped tomatoes

- 100g natural yogurt

- 1/2 cucumber, diced

- 2 garlic cloves, crushed

- 25g root ginger, chopped

- 1 tbsp olive oil

- 1 bay leaf

- 1 cinnamon stick

- salt & pepper to season

Directions:

1. Heat the oil in a large lidded saucepan. Brown the diced lamb in batches over a high heat, removing to a plate as they are done.

2. Blend the onion, garlic, ginger and curry paste in a food processor and add to the pan and stir-fry for a couple of minutes before returning the lamb to the pan and stirring to coat.

3. Add the bay leaf, cinnamon stick, yogurt, seasoning and tomatoes to the pan along with 330ml of boiling water. Stir well and bring to a boil, reduce the heat, cover and simmer very gently for 40 minutes until the lamb is tender.

4. Serve alongside the diced cucumber.
